Where do your products come from?

All of our items* are made in the United States by Chef Aurélien Dufour using local, natural and
high-quality products from nearby farms that are respectful of their animals and have strict
standards i.e. never use artificial preservatives, additives or GMO.
Each product is handcrafted with care by Chef Dufour using traditional French techniques and
recipes. It is essential to provide you with the highest quality charcuterie and meat items
possible.

*except for our pantry products.

What is the shelf life of your products?

Each item must be consumed rapidly upon delivery to ensure it is enjoyed at its best.
However, sausages can be kept for 8-10 days in the refrigerator in its original packaging. Feel
free to freeze them if needed.
The pâtés, terrines and mousses, can be kept for about 30-45 days, except for the pâté en croûte
that has a 10-day shelf life. In case you have some left over, wrap it in plastic film and keep
refrigerated for about 3-4 days. Please note that its color can change a bit due to oxidation; and if you see that the product gets sticky or smells off, then don’t eat it!
The quiches and pies should be eaten within 5-7 days, if not, please freeze them to enjoy at a
later time.

What is the best way to cook your sausages?

There are several ways to cook our sausages. You can poach or pan sear them. Please visit our
cooking tips here for further details.

Can I freeze my products?

Our pâtés, mousses and terrines are made fresh so it could be frozen if needed.  We don't recommend it but if you do, it will not affect the quality of the product much. However, we do not recommend freezing the pâté en croûte as the dough will get soggy once thawed. All our other products like sausages and quiches/pies are also made fresh so you can freeze those upon delivery if you will not consume them right away.

How can I enhance your products on a charcuterie board?

There are several ways to make a charcuterie board. You can read our article “How to build your own charcuterie board” on our blog.
