What’s the difference between pâtés and terrines?
The principal distinguishing feature of pâtés versus terrines, other than a difference in the process and often ingredients, is the consistency and the overall textural feel. A French pâté has been processed and is generally finely ground into a smooth and spreadable paste. A terrine consists of coarsely ground meat, and if a game meat such as wild boar, wild deer, or hare has been utilized for it, the terrine will have a rougher look to it.
A terrine is likely baked in a terrine mold, and a pâté en croûte is wrapped in pastry. The cooking or baking time is determined by size and ingredients. Many variations incorporate egg white or plastic wrap to create a seal while cooking; others even use a cutting board to form the shape. But the general consensus is for pâtés as well as terrines to be served chilled rather than hot. They can be enjoyed accompanied by bread, wine, vegetables, and/or cornichons, and served either as an appetizer or main dish, but are generally considered light fare.
