Uncured “porquette” handmade by Chef Dufour with a fine selection of fresh herbs and spices. The meat is tender and delicious as is or it could also be a special centerpiece once roasted in the oven to obtain a beautiful crispy skin! 

The porchetta is made from high-quality milk-fed porcelet coming from a small family farm in Canada that follows strict quality protocols.

Dufour’s porchetta is made from high quality porcelet and a fine selection of herbs and spices like fresh garlic, thyme and rosemary offering a unique flavor and texture. Upon receiving, keep refrigerated. Remove from the bag and carefully wipe away the excess of cooking juice and gelatin which you can use in a sauce or just discard it.

Since it was cooked in a net to hold it together, please remove it before slicing or re-heating.

Reheating instructions:
If you wish to warm it up to make a beautiful roasted porchetta, preheat your oven at 350 F. Remove the net and place the porchetta on a rack in a baking dish and roast for about 1hr to 1 1/2hr. When you have a nice brown and crispy skin, it is ready to be served!

*Heating time will vary depending on your oven and the size of the porchetta.

However, we used the shoulder cut from a milk-fed porcelet sourced from a small family farm in Canada, ensuring the highest quality and delicious taste. Our team prepares a flavorful mix of spices and herbs, place it onto the cut meat, roll it and cook it at low temperature for several hours.
